Pistachio Old Fashioned

When I set out to make a pistachio cocktail, my first thought was to find a pistachio liqueur. A quick online search yielded a few options, but I was concerned about sweetness—I don’t enjoy sugary cocktails— and I couldn’t imagine ever consuming an entire bottle of pistachio liqueur so I opted to make a simple syrup. I’ve only made one cocktail with this syrup but I’m curious about pairing it with other spirits. Let me know in the comments if you have thoughts or suggestions . Recipe

Ingredients (makes 1 cup of syrup)

  • 1 cup water

  • 1 cup sugar

  • ½ cup finely chopped pistachios

Instructions

  • Combine 1 cup sugar and 1 cup water in a small saucepan

  • Bring to a boil

  • Stir in 1/2 cup finely chopped pistachios

  • Simmer on low heat, loosely covered, for 10 minutes, stirring occasionally

  • Turn off the heat and let cool for a few minutes, don’t let it cool too long or those nut pieces will be impossible to get out

  • Pour into a jar through a mesh hand strainer to remove nut pieces

  • Place jar in refrigerator to cool
