Anise Vanilla Simple Syrup
When used sparingly anise adds warmth, spice, and playful complexity to a cocktail. Star anise is also a beautiful cocktail garnish (Marely’s Malediction).
When I set out to design a cocktail that would nod to my Nonna’s famous biscotti recipe, I knew I’d need a strong anise element to balance the drink. I didn’t want it to be too sweet, so chose to create a lighter simple syrup (2:1 water to sugar ratio).
I’ve only made one cocktail with this syrup but I’m curious about pairing it with other spirits. Let me know in the comments if you have thoughts or suggestions. Anise cocktails and cocktail ideas:

Recipe
Ingredients (makes 1 cup of syrup)
1 cup water
1/2 cup sugar
1/8 cup star anise
1/2 tsp vanilla extract
Instructions
Combine 1/2 cup sugar, 1 cup water, and ½ tsp vanilla extract in a small saucepan
Bring to a boil
Stir in 1/8 cup star anise
Simmer on low heat, loosely covered, for 10 minutes, stirring occasionally
Turn off the heat and let cool for a few minutes
Pour into a jar through a mesh hand strainer
Place in the refrigerator to cool
